Avocado-Watermelon Salad

(Serves 4)

1/2 Yao Cheng watermelon, large dice
4 oz. Raspberry Dressing
1 Armenta Farms Avocado, sliced
4 oz. mixed greens
2 oz. goat cheese
2 tbsp. basil, chopped
2 tbsp. mint, chopped
1 oz. La Nogalera spicy walnuts
1 oz. garbanzo beans

1. Combine ingredients. Garnish with walnuts and garbanzo beans.

Raspberry Dressing
(Makes 6 oz.)
1/2 cup raspberry vinegar
1 1/2 oz. olive oil
1/4 tsp. Dijon mustard
1 shallot, diced

1. Add vinegar, mustard and shallot to mixing bowl.
2. Add olive oil to the bowl, gently whisk.
