Playa Paraiso, Quintana Roo, Mexico
Today, we packed up and headed towards my father’s house in Playa Paraiso for a little fiesta. There we indulged in fresh seafood and margaritas. It was really nice to see people that I haven’t seen in years. Especially my aunt, who drove 5 hours from Merida, Yucatan. But the highlight of my day was the Tikin Xik. Tikin Xik is Red Snapper in Achiote wrapped in banana leaves then baked in the oven. Senora Elsa, our local cook, told me her secret to the Tikin Xik is to use Seville Oranges. She topped the dish with sliced tomatoes, chile agria, and onion. It was delicious!
